Great list! I really like Computer Science: An Overview by J. Glenn Brookshear. It takes you on an in-depth beginner tour, as odd as that sounds: from XOR gates through databases and an intro to AI.

Also Programming Logic and Design by Joyce Farrell.

Hands-down I think the best programming book I've ever read is Aaron Hillegass's Objective-C Programming: The Big Nerd Ranch Guide. Too bad Objective-C is going away. But not tomorrow.
