No mention of for loops? For example,
for f in *.avi; do ffmpeg -i "$f" -vn "${f/%avi/mp3}"; done
will convert every avi file in a directory into an MP3. I'm sure you could come up with a more appropriate example using standard bash commands.
Other than that, this is a really neat collection of tips and I've learned some things that I'll use in the future, thank you.
