The ( ) force a new subshell, where { } doesn't.
The && test seems pointless. I'd use ;
nicemount() is a function, not an alias. It could be made an alias.
The echo stuff can be put into awk with a BEGIN{} block and a print.

mount | awk 'BEGIN{ print "DEVICE PATH TYPE FLAGS" } { print $1, $3, $5, $6 }' | column -t
